Quick crunchy fish sticks...
« on: July 11, 2012, 07:35:26 PM »
Believe me, I'm NO cook.  My son and his 2 friends over the house and the wife is off to some kinda workout-nonsense-class-pilates...whatever TF it is... ;D

1/2 cup Old Bay, 1/2 cup flour.  1 cup Panko.

Mix everything together well in a bowl.

Cut fish into strips. I used fluke, cbass and some vac packed cod I had left over.

Dip fish in egg, then panko/oldbay/flour mixture.

Lay on a cookie sheet greased lightly with EVO.

Bake 350 20 minutes.

Crunchy as hell w/o the deepfry.

Its better to sit in a boat and think about God, than to sit in a church and think about fishing.

Trish if you like a flaky, crunch to your fried food Panco is the way to go. It is a Japanese coarse breadcrumb that is fantastic to cook with.  Just about every food store carries it now.

Sounds like something right up my alley....and to bake it instead of frying too! Breadcrumbs are a lil heavy for me. I prefer the lighter side of everything. I'll have to check it out! Thanks!!!  slt

If you're going to use the seasoned Panco don't use the Old Bay.  If you are going to use the Old Bay they have 4C's that is not seasoned.

I have to disagree but its all a matter of taste. I used "seasoned" crumbs and still added OB to the flour. Gave it a spicier taste not a saltier taste.
