Fish Chowder

Here's another of my Dad's recipes, this one is a family favorite.

 INGREDIENTS

    * 1 pound sliced bacon
    * 1 large onion, chopped
    * 5 medium potatoes, peeled and diced
    * 1 1/2 pounds White fish fillets, cut into 1 inch cubes
    * 1 (12 fluid ounce) can evaporated milk
    * 1/2 cup whole milk
    * 2 tablespoons butter
    * salt and pepper to taste

   
   
DIRECTIONS

   1. Place bacon strips in a large stockpot over medium-high heat. Cook bacon until crisp, then remove to paper towels to drain. Drain grease from the pot, reserving about 1 tablespoon. Set heat to medium, and fry onions in the reserved bacon grease until tender, about 5 minutes.
   2. Add potatoes, and fill pot with just enough water to cover them. Bring to a boil, then cook until potatoes are almost tender, about 5 minutes. Add fish pieces, evaporated milk, whole milk, and butter. Bring to a boil, then simmer over low heat for 30 minutes. Season with salt and pepper to taste. Ladle into bowls, and top with crumbled bacon pieces.

Sounds good TT^, Very close to a recipe I posted and cooked a few times.   Its very good too.

My Dad was the chef at the Kings Grant Inn on the Manasquan River in Point Pleasant before he passed. They used to run the Benihana Boat race from the marina there.
Mom and Dad lived in Manasquan, and Dad used to keep his boat over at Frick's Marina in Point Pleasant. ( both the marina and Inn are only memories)

That sounds amazing, I will be making that in a few days. Might try it with striper or bluefish? I'm sure it will taste good. Hell maybe ill get 2 dozen cherrystone clams or something and toss them in.  Thanks

How would blue fish taste in it ? And should I cook the fish before I put the little fish cubes in the pot? Or will they cook for the 30 minutes in the pot along with everything else ?

The fish goes in the pot raw. It will cook with the other chowder ingredients. t^

The soup is at a simmer for 30 minutes! Looks and smells great. It cost me 12 bucks at AnP for the ingredients, except for the bluefish I had caught. A can of a clam chowder is about 5 or 6 bucks.
