It depends on the time of the year and what species you are targeting.

Some popular baits used in the surf are:

clams
blood worms
bunker
squid
spearing
mackerel
mullet
sand bugs
eels
spot
and many more...

Please add to the list:

A thumbnail size piece of fresh shrimp (medium to large size shrimp).   t^  The BEST being fresh Florida shrimp, IMHO.   ;D

You can never go wrong with clamsfor most everything caught in the surf.  The size of the bait on the hook is related to the temp of the water.  The colder the water the smaller the clam strip.

But don't forget that in the summer cut bunker is also a prime bait when the schools are running close to the beach.

But Bucktail has a run of all baits that will work at different times during the year.
