4 to 6 bluefish fillets ( I put 2 at a time on a
microwave safe dish covered and cook for 7 to 8 minutes
or until done in microwave)
when all fillets are done flake apart being careful to check for any bones . Put into a large bowl.
add 1/4 cup old bay seasoning or to taste
1 large onion diced
2 to 3 celery stalks diced small
1 small jar relish
2 eggs
juice of 2 lemons
tablespoon or so of hot sauce
mix all above to combine together
the mixture will be moist, add handfull's of
crushed corn flakes until most of the liquid is
absorbed but dont make it too dry just add enough
so that they hold together well when formed into
hamburger size on the thick side
Heat oil in frying pan, in a bowl pour bread crumbs and roll each fishcake into breadcrumbs and fry until brown on both sides.
Serve with tarter sauce or whatever you like
I Like to have them on potato hamburger buns
