Title: Sea Bass Ceviche

Got this from another site a while back and tried it over the weekend with some nice seabass caught on Sat on a friends boat...you can play around with the peppers as the habenero's are a bit too hot for me....I used jalapeƱos and chopped up some red peppers....I think this will work well with most white firm flesh fish.

Ingredients:

2 lb. Black Sea Bass Fillet - Cubed (bite size)
6 Limes
1 Red Onion - Finely Diced
1 Tomato - Seeded & Chopped
1 habenero pepper - finely diced
Cilantro - chopped
1 Avocado - chopped
Salt & Peper
Tobasco

Method:

In a noncorrosive dish (do not use metal), place the Sea Bass, onion, tomato,
habenero, & cilantro. Squeeze the lime juice over ingredients. Let sit in fridge stirring occasionaly. Remove from fridge, add avocado, salt & pepper to taste, & add a dash of tobasco. Stir again and serve with tortilla chips
