Was reading an article in the magazine i recieve every month . They mentioned something about snappers/smaller bluefish tasting the best when:
Marinated in a balsamic vinagrette for 1-2 hours. Grill it over a Medium-High flame for no more than 5 minutes on each side. A few sliced fresh jersey tomatoes over the fish. Eat it with some corn on a cob and a nice cool refreshing coors light. OR an iced tea, or whatever you prefer. TT^

Ya put a Red Brick and a Blue fish in the oven, when the brick is hot enough you throw out the Blue Fish and eat the brick 00ps t^

if you eat bluefish, yes, the smaller ones taste better.

Blues are not my favorite tasting fish. :P

I will say, I have a fish cake recipe and tried it on bluefish, and from now on.. I keep them.. They are great and you don't even know that they are bluefish..

Anyone who thinks snappers don't taste good is really missing the boat ! If handled and cooked properly they are the single best tasting fish in the ocean. I HATE any strong tasting fish and I just love these snappers.
First thing is you have to prevent the fished from being stressed. No flopping around on the deck or cooler. Drop the fish directly into a fish box or cooler that has plenty of ice or keep them alive in a bait well (my method).
Don't fillet them just clean em. Fill the cavity with Mayo and your favorite spices and some salt and grill them on the Barbie. I just did this on Monday and they were better than founder or sea bass. I served them to some friends who hate bluefish by telling them they were sea bass. Wasn't a piece left when we were done. Try it this way and you'll be a believer.

I heard this recipe only with an piece of apple board in stead of the brick the board has more flavor and the cats in the neighbor hood always like the fish ;D

When I was a kid, mom used to pan fry snappers- dip the fillets in egg, coat with italian breadcrumbs (or panko) and fry in vegetable/canola oil on each side until golden brown.
Put a fillet or two on a nice fresh kaiser roll with some lettuce, tomato from the backyard, add a little mayo and a squeeze of lemon and you've got lunch!
