Any really good recipes for cooking flounder people would like to share ? Thank You.

my favorite is wrapped in foil with butter, a little onion, a little garlic and a dash of adobo(spanish seasoning)

A favorite here is, in a large zip lock bag put flower, salt, pepper, onion powder, cardamom and paprika (don't over kill with too much spice less is better here). in a small bowl crack 1 or 2 eggs and if you want a little kick add a little hot sauce. Mix well and dip fillet into egg and then into the flower mixture in the bag shake till well covered. (you can put a number if fillets in at once to cut time. Fry in vegetable oil till golden brown drain and enjoy.

Your basic flour, egg and then bread crumbs. BUT instead of bread crumbs, I use Japanese PANKO Crumbs. You can now find them at Shoprite. Makes it light and crispy. You wont be disappointed. Drizzle on some garlic/butter/parsley when cooked. NICE!!!

I also use the basic flour and eggs but instead of bread crumbs I use Betty Crocker potato buds. Can bake in oven or fry in pan with a little oil. Either way comes out very crisp. I also use the microwave at times. only a few minutes and it's done.

I have subbed crushed Doritos or Funions instead of bread crumbs or flour. Very tasty but you can really use any kind of your favorite chip.

If anyone trying to watch their diet and or cholesterol try this,
Fluke fillets
in seafood dept. of most major stores they sell
seafood stuffing in tubes like cookie dough.
Get a muffin pan and wrap the fillet in each of the muffin cups spoon the stuffing in the center top with a dab of butter or one of the substatues like I can't believe its not butter sprinkle some oldbay on top of each,
bake at 350 degrees for 20 to 30 min,
the muffin pan holds the fillets together while they bake,

Not exactly for those watching their diet or Chol.
Doesn't mean it's not tasty tho.

Try beer batter! One can of favorit beer, flour to thicken and a teaspoon of papricka. Too much flour and you will end up with a piece of fish inside a funnel cake. Deep fry in veg oil until golden brown. Can't go wrong with this one!!

baked flounder with panko crumbs is an awesome dinner or on the grill wrapped in foil with a dash of italian dressing, a slice of tomato, and a couple of aspagus spears

Instead of egg dipping try brushing filet with mayo and then dipping in the breadcrumbs of choice. Gives a nice thick coating of the crumbs for a little extra crunch. Also a tip whether you go with the egg or the mayo, refridgerate the breaded filets for fifteen minutes prior to frying. This will help the crumbs stay on the fish instead of the bottom of the oil. (to those who thing the mayo idea sounds gross, remember that mayo is just egg and oil!) The other nice thing about the mayo is that you can mix dry spices into it before brushing the filets. this way you get your fish evenly spiced, and you can taste test the mayo for the right amount of spice!!!

Take some LemonPepper marinade like Lawry's 30min marinade and let them sit in it for a little while. Put fillets in foil and through on the grill. Quick and easy to make and clean up. Tasty too chrz
I also bake mine: Take buttered or Pam sprayed baking sheet, cover bottom with some bread crumbs, place fillets in and season with whatever(salt, pepper, garlic, Old Bay, etc) add some drained canned crabmeat, cleaned raw shrimp, and sprinkle some more bread crumbs on top. You can add some butter, EVOO or whatever on top to help brown, but fine without it. Bake at 375-400 for about 20minutes and you're done. TT^

Hands down this is the BEST 2lbs flounder 1lb sea legs 1lb bay scallops 3/4 lb swiss cheese (log) mix the scallops and sealegs together cut the swiss cheese in to 1/2 in. strips . fillet in one hand, put a strip of cheese in the middle, grab a hand full of the scallop sealeg mixture put it on top of the cheese, then fold the fillet over, place seam side down in a caserole, I butter and bread crumb the caserole first ( I make bread crumbs out of ritz crackers ) repeat till full, place remaining cheese on top,between,around stuffed fillets a couple tabs of butter on top and sprinkle with the cracker crumbs . bake at 350f for 1/2 to 3/4 hour so cheese is bubbling and fish is just done. ENJOY

I like mine fried with Panko seasoned with OldBay, but sometimes I go to Trader Joe's and buy the frozen crabcakes.....stuff a flounder filet with the thawed out crabcake, roll the filet and season with OldBay...dot with butter and bake in the oven at 350 until flakey....time depends on the thickness of the filet.

Smash up some Cheese-it crackers until powdery, add Grated Parm Cheese and Black pepper.
Egg wash filltes, dip in cracker mix......bake or fry.

IF you do beer batter,open the bottle/ can the night before. If you can't, then start with warm beer!
