One thing about the people who call the Deep South home...We love to eat. And there is nothing we like better than fresh; I mean really FRESH foods. We love fresh fish; we catch our own:

We love The Best Whole Hog Country Sausage EVER. NO preservatives, NO fillers, and only the best cuts are good enough for Southern folks. We harvest our own. To us Country sausage, real Country sausage, is a way of life.
Problem is that the Florida wild hog is recognized as one of the smartest animals in the woods; their nose is second to none and they know how to use it. They are experts at survival. They can be very difficult to harvest. However, they do have one huge flaw in their armament, they are always hungry. Feed them and they will come; we hope.
The electric corn feeders are in full operation, the corn is flowing. Whole Hog Country Sausage...here we come. Let's go Florida hog hunting:

With proper preparation the Florida wild hog can produce 'The Best Whole Hog Country Sausage Ever.'
The Sunshine state is hot; that means our Florida wild hog must be dressed as soon as possible. In addition, after soaking a few days in a mixture of vinegar, salt, and ice water, our wild Florida hog  will look as nice as any to ever grace the butcher's chest:

Smoked for 2 1/2 hours @ 225 degrees over authentic Jack Daniel's oak barrel chips is hard to beat. When you first open that smoker you absolutely will not believer the aroma:

Guys, you absolutely would not believe how much whole hog sausage a 200 pound wild Florida hog makes, or how good it is. I like to add about 2 pounds of beef fat, & 1 pound of hog fat to make the flavor stand out even more; if that's possible.
I processed almost 50 pounds yesterday, and finished the job this morning. Once vacuumed packed our Country sausage will last for years. However, it never last that long. Taste it and you will see why.
