Just a suggestion instead of the potatoes use rice or pasta to serve with since you will have plenty of sauce.

I used only 2 tbls oil instead of the 1/4 cup it calls for and served it over spaghetti 2 lbs.also I used 2 28 oz cans plum tomatoes chopped and 1 can of tomato sauce made plenty of sauce and 2 striper fillets cut in 1 in cubes
