Title: Brown Trout cakes

I had a big brown trout fillet sitting in the freezer and was inspired by Rachel Ray to come up with this.

It's delicious if I do say so myself!

I'm sure it would be good for almost any fish. Sorry for the lack of detail on measurments but I just threw it all in a bowl...

1 large brown trout (or other) fillet
2 eggs (I used egg beaters)
mayonaise
breadcrumbs
Old Bay seasoning
minced garlic
minced onion
Chili powder
chushed red pepper

- Cut up the fish fillet into 1" square pieces and put into a mixing bowl.

- Add the eggs, mayo and breadcrumbs to form a
  mixture that can be formed into cakes.

- Add the rest of the spices to taste.

- Mix well with hands or wooden spoon.

- Form into cakes

- Season with salt and pepper to taste

- Fry in Olive Oil until golden brown.
