De Winterizing

I know what you need to do to winterize your boat, I have done it a few times with other friends and family.  But i was never around when they winterized the boats. I have cabin fever and considering it will be 8-12 weeks at the minimum until i get the boat out and on the water again I need to keep my brain busy. 
What do I need to do, i didn't change the lower units oil so i have to do that; i know to change all filters.  but should i get ride of the oil that has been sitting ( I have an outboard)?  An ideas or suggestions welcome...

most of the things, like lower unit oil should have been done at the end of the season prior.  What I do, recharge and install the batteries, crank the engines and let all that gunk out.  After that is finished, I replace the plugs.  Some people replace the plugs before the first crank, but why get all that smudge on the new plugs.  Touch up bottom paint if using multi season.  Power was and wax.  Check all electronics, navagation lights, etc. Don't forger to put in the drain plug, launch and fish..

This may be a stupid question, but why use grease and not never seize?  also, I have a fuel inject EFi Yamaha, how should i go about de carbing that.  I have de carded a carborated outboard before but never a fuel injected.  I heard it is a bit more involved.  I doubt I will do this stuff myself for the first time, but i would like to know how and why all this stuff is done.  I am a nut like that, i blame the engineer in me  nts
