Tog - Bleed and Filet Two part question

1) Do you bleed your catch or not?   What technique do you use?

2) Best way to filet?  How do you get around the pinbones without plucking?

I bleed em...I take my scissors and cut em right under the gills and let them bleed out in the cooler...

I just hack right through the rib cage. Lose a little meat but not all that much when you trim it out.

I like that Kenny! t^  They are a bit tricky.

I was trying to watch how Capt. Joe did it the other day when we got back to the dock. But all I wound up doing was butchering a couple of them.  Fortunately I was practicing on the small ones.
