The Hogfish is a species of wrasse native to the Western Atlantic Ocean, living in a range from Nova Scotia, Canada, to northern South America, including the Gulf of Mexico. This species is currently the only known member of its genus. The Hogfish uses its elongated pig-like snout to rummage and graze for crustaceans that are buried beneath the sand. The shape of its snout and the way it uses it is what gave the Hogfish its name. The Hogfish has earned the reputation of being one of the best eating fish ever to swim. In the Florida Keys it would be hard to find a restaurant menu that doesn't feature this iconic fish. Many of the best chefs feel the Hogfish possesses the perfect combination of flavor and texture because the Hogs are sweeter than Grouper, flakier than mahi and as rich as Scallops. One of Islamorada's most popular restaurants, Chef Michael's, uses the Hogfish as the center of its logo:
