Good Friday Potato pancakes

This is a family tradition that my old man has prepared for us every Good Friday (I don't think he will mind....I hope).
 Should feed 15 Haaaa.
 We top them with either stewed tomatoes or apple sauce.

    5 lbs. red potatoes (peeled)
    3 lbs. yellow onion
    1 1/4 cup strained flour
    6-8 eggs (depending on the size)
    Salt & Pepper to taste.
Use a food processor to grind potatoes-drain excess potato juice, grind and drain onions.
 Mix potatoes/onions/flour/eggs-salt & pepper.
You should have a batter like constancy.

 Melt Crisco in a large skillet-should be able to make appx. 3 pancakes at a time flip when golden brown(carefully)cook other side the same.

15?  Not in this Polish House...Potato pancakes is like a staple we have them at least once a week.  Hint try using white sweet potato's tastes as good but a little sweater.  And less carbs. ;D

I tried the recipe and it was ok.  Next time I'm going to cut back on the flour and eggs.
