Beer Battered Fluke Fillet
1 lb. Fluke fillet cut into manageable pieces
1 bottle or can of Beer (Your choice)
1 1/4 cup Bisquick
1 egg
1 Teaspoon Salt (or to taste)
1 Teaspoon Pepper (or to taste)
Sprinkle of Old Bay
In mixing bowl combine dry ingredients, add egg, and stir. Slowly add beer, you want the batter to be a little loose for a lighter coating use more beer if batter is to thick. Stir batter until there are no large lumps.
In a frying pan heat vegetable oil to about 350 degrees, Use a good amount - you want the side of the filet's cooking as well as the bottom. Deep fryer can also be used.
Dip fish in the batter, then lay in the oil, cook until bottom is lightly browned then turn, total time is about 4-5 minutes - shorter if oil is hotter or filet's are thinner. Eye it, you want the fillet to be golden brown. Drain on paper towels.
If there is room in the pan slice up a few whole potatoes very thin, and add to the oil, fry until they are golden brown, drain.
Serve with Tartar Sauce or Malt Vinegar.
