New to Jersey fish

It's soon approaching my first New Jersey winter and I've narrowed down my targets to Tautog, Flounder and Sheepshead. Should I be targeting more species? Do the fish even bite in winter months? Do they go deep offshore or will they stay close inshore?

I'll be in the Manasquan river and Glimmer Glass area. Thanks everyone!

It's a good time to start looking for tog. I think there was just an article of inside tog from kayaks in On the Water magazine.
