Never had it..  How would you rate and compare this fish with others?

Cooking techniques?

I would be interested myself.  I never had Tog.  And don't say it tastes like chicken either.

one way is to steam the fillets:place water in pot and then place fish in steamer on top of that. don't need to steam for too long-place on top of your favorite salad.
another way is to dip in flour that is spiced to your desire,then dip in egg (or not), and place in pan with a little butter and oil.Fry.
another way is to lay fillets in bake pan,some butter on top with diced onions cook for short while.No fish should ever be OVERcooked.Good Luck,Enjoy.AJ

VERY big i oriental community. Nice chinese lady at work (who can cook her ass off-bluefish she made was some of the best cooked fish I ever had PERIOD!

I showed her a pic of them because she did not know them by name. They make soup out of the heads and she says they stir fry the meat.
Gona bring her some next week if i catch any and will get some recipes.

Even told me to save her the heads if anyone else ain't keeping them,lol.

Dip in egg, flour, egg, Betty Crocker Potato Buds seasoned with salt and pepper, Bake at 350.  Comes out very crisp.

They're a mild tasting, white fillet fish.  Sort of like a mix between fluke and cod.

I like mine baked or broiled.  They're killer in a chowder as well.  Can fry them, but usually the fillets are thick so gotta slice em down.

Most usual way I bake them is to just toss them on a baking sheet that's buttered or sprayed with Pam and breadcrumbs.  Sprinkle some seasoning, i.e. slat, pepper, Old Bay, etc.  Then some canned crabmeat and cleaned raw shrimp.  Lightly cover with some more breadcrumbs and bake for like 20 minutes.  Comes out quite good IMHO. TT^ chrz

Bleeding the fish when caught does make the fillets much more white.  Just take your scissors and cut them under the chin where the gill plates meet.

I've had them many ways, but the best was as a whole steamed fish oriental style....meat fell off of the bones and was  out of this world TT^

Togs are one of the best tasting fish in the Atlantic! Take your favorite fish recipe and try it,I guarantee you'll love it.  ;D <'((((><

I'm not a big fish eatter but tog is one of may favorites.

I either have it raw with some wasabi or I'll cook it by placing a few pads of butter on it, salt & pepper to taste & nuke for 5 minutes. Have done that many times on boats with microwaves  t^

I know there are alot of good recipes out there from paoched blackfish to blackfish chowder.
