« on: May 07, 2009, 09:32:13 AM »
Here ya go NJDEVIL

Fresh Striper fillets cut in burger size squares
McCormick Cajun Season
Garlic powder
Crush Red Pepper
Butter
Potatoe Rolls
Ranch Dressing

pat the flliets dry and coat with garlic powder and cajun seasoning and crush red pepper ( both sides)..

melt half stick butter in pan

blacken both sides of striper fillet..Striper fillet need to be flakey white..and have a a nice crusty to the fillet.. so it takes a good 15 minutes to pan sear the fillet.

Then just plate on a potatoe roll with lettuce and tomatoe, add  the ranch dressing .. MONEY !!!!

Oh My God!  I just made a couple of these beauties for Cashin and myself from last nights catch. I used Ken's blue cheese salad dressing on top. And the same ingredients suggested. Also a couple of Dos Equis. I highly recommend this easy dish to all. chrz chrz chrz chrz

Didn't do the burger thing, but made them for dinner last night.....excellent and easy to do...varied it by dipping the fillets in melted butter then coated them with the spices.....heated the frypan for 10 minutes before I added the fillets ala Paul Prudhomme, did it on the outside burner to keep the smoke down in the kitchen....made the wife happy.

WOW!  That's all I can say.  Tried this for lunch today, out of this world!  The only problem I had was finding cajun seasoning in the local supermarket, no sweat... I made my own.  I used equal parts (about 1 tbsp ea.) onion powder, paprika, cayenne pepper, sea salt, white pepper, black pepper, and doubled the garlic powder.  Sparingly added crushed red pepper flakes.  Served as suggested on  a potato roll with lettuce, tomato and ranch dressing.  Had Kezsr over to try it as well.  Thanks for sharing the recipe Capt. Joey.  I think this may be my new go to recipe for bass.  Just awesome! t^
