Huge Skates....

... and other assorted species. Headed out for a quick trip 7/29 Sunday Morning to calm bay and partly sunny (a very small partly.)

Regarding our recent flatfish gathering trips; not actually coming out and calling it "discouraging";  you could say the keeping has been less-than-stellar.... OK who am I kidding, it flat out has pretty much sucked for us so far this year. To hopefully change it up, we headed up to some dips, humps, ledges, holes, and gouges near the VZ that Ya Sista's A$$ has not visited yet this year.

We almost boxed up the garbagefish trifecta, but couldn't pull out any LR's to seal the deal. Bigmonsta skates, mixed in with a few miniscule flukies, and a smooth doggie that king cobra'd on us, rising up out of the bucket on his tail. Stripped up everything we legally could, and finally landed a NY keeper drifting east of Oakwood. Skatewing flutterstrip was the ticket.

No more for us; we worked the CH channel edges and the western Knoll south to almost the CH6.

Back by 11. One keeper is better than none. Thanks Tom!!

Looks Like a Gangiei to me,  :headscra: at least its not the sting rays as reported along the beaches that have caused closings. Most likly also Gangiei's also

Skate has a mildly pronounced flavor similar to scallops. The flesh is soft but firms up after it has been chilled. Raw meat has a slightly off-white, sometimes pinkish, color and cooks up off-white.

The meat of the wings, the only edible parts, has a striated, open-fan configuration. Because of the wing structure, skate has a stringy texture. Each wing produces two fillets — one from the upper side and one from the lower.

Cooking Tips:
The wings are composed of strands of flesh, a layer of cartilage and then more strands of flesh. The meat can be removed from the cartilage after it’s cooked, though cooking does soften the cartilage. Skin should be removed before cooking. Try poaching skate in liquid made of water, wine vinegar, a thinly sliced small onion, a bay leaf, parsley and thyme. Serve with browned butter to which capers have been added.
