Hey all what does one do when your anchored up and you you have a jet ski buzzin by you at about 100 feet.

Actually there is not much you can do.   5hrug  some Jetski operators don't know anything about fishing and that they are scaring off your fish.
   Perhaps if you can get within earshot of the operator of the craft you can explain to them how impolite and disruptive they are being.      Of course you will use polite language and say "Have a nice day"  as they depart. t^

That would be a good route to take. If they are close enough for you to get their reg #, they are too close. Report them and sign a complaint for careless/reckless operation. Video helps in proving the fact.
