Ling-ling fish cakes

I had a couple of nice ling from Tuesday's outing. I simmered the flilets that I cut into chunks until the meat started to flake.  Actually that fish would have been terrific with some melted butter, but I mashed some potatoes and mixed them with the fish about half potatoe, half fish.

Added a grated onion, some old bay spice, a beaten egg and enough old bay bread crumbs to achieve the right consistency.

Shaped into cakes, coated with some more old bay bread crumbs and fried them to golden brown in canola oil.

Sounded So Good, I defrosted fish (FLUKE)and did the same thing,added all the stuff you mentioned and also some shredded red bell peppers and parsley. Everybody enjoyed them , HUM HUM.  Thanks,  AJ
