hot peppers

 so i picked up 2lbs of italian hot peppers, and want to make some hot sauce, or i've had pepper sauce that was basically vinegar that was pretty good, but dont really know how to duplicate.

 what kinda recipes you all have for such tasty toppers? tried the google thing with out much success.

Reel Time, You can take  some of those Long Italian Hot Peppers crush( or cut) em up add some water and vinegar and spices to your taste and store them in a glass jar for 4-6 months.

I like to fry them with olive oil and garlic cloves, put on sandwiches or have them with a nice steak on the grill.
For hot sauce recipe go to foodnetwork.com and type in hot sauce saw one from emril Lagasse using different peppers but you could use those with the recipe good luck.

Try getting some nice sized jalapenos and slow smoking them either in a smoker or your grill with only 1 or 2 burners on. Roast em until they shrivel slightly.

And if you want to get the skin of easily blanch them in ice water for a few seconds after taking them off the grill put them in a towel and gently rub off the skin works like a charm.

I will have POUNDS and POUNDS of Habaneros, Jalapenos and other hot peppers come August. So if anyone is interested let me know and I will get in touch as they grow. Last year 4 plants produced 250 peppers..
