fluke or flounder w/crabmeat stuffing

Start with a couple lbs. of filets (any white fish will work, seabass, tog, fluke)

Let 1 stick of butter soften at room temp.  mix with crushed Ritz crackers, about 3/4 of a roll.  Add one 5 oz. can of crabmeat / drained (bumble bee, starkist... whatever brand )  Season the stuffing with garlic powder, onion powder, dried parsley and paprika.  spread the stuffing over a filet and roll it up, hold it together with a toothpick.  Melt a little butter to baste the top of the rolled up fish with.  sprinkle paprika and parsley on top.  Bake at 350 for about 30 minutes.  Baste the fish a couple times with the pan drippings while it cooks.  Squeeze some fresh lemon over top and serve.

Sounds good, I use a muffin baking pan roll the
fillets up and put them in greased muffin pan
holds the shape of the fillets no need for toothpicks.  t^

had this before when striper74 made it,made  this last night for dinner with my fresh fillets from the day before. t^ if you have some fresh fillets you have to try it.    Kez
