Frying Fish....

When you guys fry your fish, whether it be flounder, striper, tilapia, blues...

How do you do it ? Flour-Egg-Bread crumbs pan ?

Do you use Oil in the pan, and fry it like a restaurant would, or butter or some type of cooking spray ?

My fish, the bread crumbs seem to come off fairly easily. The restaurants, its like a quarter inch thick layer on that fish.

If you're doing a breaded fillet (as opposed to battered) I like to bread it and let it set in the frig on some wax paper for 30 minutes - 2 hours.  The breading seems to stay on much better that way.  I do that with chicken, pork, fish.....anything that gets breaded and cooked. 

That thick coating is from being batter dipped, like Kez posted.

 I use a store bought coating. I beat egg and milk together. Dip the fish in it then the coating. Let them set coating stays better. I use a frying pan with canola oil. About 1/2 to 3/4 inch of oil. Oil has to be hot about 375 or it will soak into the fish. You can add seasoning to the coating if you wish. Enjoy!!

Mark the trick to keeping the breading on the fish when frying is to dip the fillets in an egg wash then bread it and put in the fridge for an hour or so. The fry it with veg. oil make sure the oil is hot not smoking though.

Since I'm trying to lose weight lately ( :P ) I use skim milk instead of eggs for coating and about a tablespon of olive oil in the bottom of the pan instead of deep frying.

I dip it in the skim milk and then dredge in a mixture of flour, ceyanne pepper, salt and a little sugar.

Tastes good to me...

All good advice as usual.. making me hungry (not hard to do)If you ever want an easy pre-fabbed dredge, try "House Autry"  I was turned on to this coating mix when I was down south on a Catfish safari..all the locals raved on it..  very tasty  ;D  chrz

Thanks uncle luna - yeah I have a tough time making it look like it came out of a restaurant.... Lol... Mark - need to start catching and keeping catfish when I'm around my local lake and not hitting the beach... I heard its delish, only had it once way back when....

I like to dip mine in a little fiberglass resin! You gotta get the oil hot first though cause you only have 10-15 minutes working time!! Those breadcrumbs will never come off! rofla

All kidding aside I'm gonna try that recipe!! Sounds good t^
