Maybe I'm just too much of a city boy cause I couldn't eat turtle.  I would get out to my cousin's house in Gibbsboro a couple times a month and we would go down to the golf course and catch turtles for his turtle pond (when he came to the city we would shoot rats with bb guns).  One time we caught a snapper about the size you're holding up and we named him Dino.  That thing actually climbed a four foot fence trying to escape.  They sat and watched him and when he got to the other size they through him in the truck and let him go at a pond.

In rivers and deeper parts of lakes I run jugs and trot lines for them and let them sit over night ,in swamps and mud flats I walk and look for them then run up behind them and grab them .in tidal creeks I go into the muskrat holes and pull them out .they are a pain to clean but well worth it once you learn how to cook them ,we make stews, soups, burgers, jerky and a bunch of other things

That turtle skull looks great so it got me wondering what other kinds of bones they got in em.  I gotta do a Google search on that.  Great thread.
