While we were on vacation this past summer, we met a couple who was staying in the campsite next to us. They gave me this recipe and I gave it a try yesterday. It’s really good so I thought I would pass it along.
5 large or 6 medium potatoes
1/2 gallon milk (whole)
1/2 pint heavy cream
36 chowder clams
1 medium onion
3 tablespoons Worcestershire sauce
2 sticks unsalted butter
1 cup corn starch
Old bay to taste
Mince onion, sauté with 1 stick of butter until clear then set aside. Clean & steam clams, save liquid and strain. Use food processor to chop clams. Combine clams, onion, Worcestershire, butter and clam broth. Simmer 30 minutes. Dice & cook potatoes. Drain & set aside. Add milk to clam mixture. Heat to almost a boil. Add mixture of cornstarch & water to thicken. Add potatoes & cream. Allow time for seasoning to work. Do not add salt.
( I let it sit overnight and it thickened nicely )
