You may be able to get away with something like this.
just make sure the length of the forks on the anchor don't rub against your bow. I am not sure how long this bracket is, but looking at it, it looks to short. Your not going to bolt it at the very tip of your bow. You will have a slight over lay. When the anchor comes up, the forks of the anchor will sit below the bracket and possibly reach the very front of your bow. Just make sure you measure everything properly.

I've seen some pretty beat up gel-coat/glass due to improper installs.
Thanks All! Yes Capt Joe that's what I was looking at. I would need to measure as the bolts would have to go through the front deck. Not sure if the mount is long enough.
